Street Corn Nachos

INGREDIENTS

We all know that street food can be innovative, delicious and packed with flavor; these nachos are no exception.

 

Avocado Sauce:

Ingredient Weight Measure
Simplot Harvest Fresh® Avocados: Avocado Pulp, Frozen 10 oz.
Mayonnaise 10 oz.
Lime, zested and juiced 2 each
Habanero pepper, stemmed 1 each
Cilantro leaves 2 oz.
Sugar 1 Tbsp.
Kosher salt 1 tsp.

Nachos:

Ingredient Weight Measure
Simplot Select Recipe® Fries: Sea Salt Chips, Skin On 5 lb.
Simplot RoastWorks®: Flame-Roasted Corn & Jalapeno Blend 40 oz.
Simplot Harvest Fresh® Avocados: Western Guacamole, Frozen 32 oz.
Cotija cheese, crumbled 8 oz.

PREPARATION

Preparation Instructions:

Step 1

Thaw avocado pulp and guacamole according to package instructions.

Step 2

For avocado sauce; combine avocado pulp, mayonnaise, lime, habanero, cilantro, sugar and salt in a food processor and purée until smooth. Transfer to a squeeze bottle and store chilled for service.

Step 3

Prepare corn and jalapeño blend according to package instructions.

Step 4

For each serving; prepare 5 oz. of chips according to the package instructions and place on warm serving dish. Top with a drizzle of 1 1/2 oz. avocado sauce, and 2 1/2 oz. corn and jalapeño blend. Sprinkle with 1/2 oz. of cheese and serve with 2 oz. guacamole on the side.
